Four minutes from the door, in the artists' quarter, order risotto alla milanese – rice stained gold with saffron, finished with bone marrow – and the towering cotoletta, the bone-in breaded veal cutlet the Milanese have argued over for two centuries. This is lunch the way locals eat it.
Ten minutes on, towards Corso Garibaldi, sit down in an old osteria for ossobuco – veal shank braised until it falls from the bone, crowned with gremolata – or a winter cassoeula. Order the house Barbera and take your time; nobody rushes here.
